1 pkg Savannah Smiles cookies, crushed
1/4 C butter, (half stick) melted
FILLING
1-3.5oz pkg Lemon Jello
1 cup boiling water
1-8oz pkg cream cheese, softened
1/2 cup sugar
1-8oz tub whipped topping, divided
Lemon slices
Mix Jello and boiling water until Jello is dissolved. Refrigerate for about a half-hour or until partially set. In the meantime, prepare crust by mixing together butter and crushed cookies. Reserve 1/3-cup of prepared crumbs. Press remainder into a pie plate or divide and press into muffin cups.
Prepare filling by mixing together softened cream cheese and sugar. Mix in partially-set Jello. Gently fold in half of the whipped topping until completely mixed.
For pie, spoon the filling mixture into the prepared pie crust. For tarts, spoon filling into a large ziploc bag. Snip off one corner of bag and pipe into muffin cups.
Top pie or tarts with the remaining whipped topping and sprinkle reserved crumbs on top along with a lemon slice, or for tarts, small pieces of a lemon slice. Yummy to eat and look at!
